So I can take 0 credit for this recipe. But it was super fresh tasting and had all of the veggies (okay, so not all of them, but you get my point).
Things I did a little different:
I used sweet potato noodles that are premade at the grocery store, as well as Zucchini which I spiralled at home. However Safeway has all sorts of pre-cut vegetable noodles now, so it’s a great way to save some time. I wouldn’t necessarily use the sweet potato ones in this recipe again, just stick to the Zucchini as the sweet potatoes fell apart. Still tasted good though!
Second change I made was that I BBQd the meat. Which if you can I highly recommend as the grill adds great flavour.
Otherwise it was a great tummy-happy meal that was super filling.
