Stuffed Peppers are one of the most versatile things that you can make. Because, well…. you can stuff them with pretty much anything. Lasagna filling? Yum! Taco fillings? Delicious! Buffalo Chicken? Yes please!
So needless to say, I have made my fair share of stuffed peppers. My go to however is stuffing it with ground turkey, and a whole lot of veggies! (And of course covering it in Cheese, because, well I have a love affair with cheese)

Turkey Stuffed Bell Peppers
Makes 5 Stuffed Peppers
-5 Female Bell peppers (yes, apparently there are male and female peppers – Female peppers tend to have a flat bottom, which makes them easier to stand up in the baking pan), tops cut off and hallowed out
-1 Package of Ground Turkey Thighs
-1/2 onion, diced
-2 cloves garlic, minced
-2 Celery stalks, diced
-1 carrot, diced
-5-6 mushrooms, diced
-1/2 can black beans, rinsed
-Salt and Pepper to taste
– tsp of Cayenne pepper
-2 tbsp chopped green onion
-1/4 cup grated cheddar Cheese
Preheat oven to 400F
Heat 1 -2 tbsp oil (coconut or olive oil) in a frying pan over medium high heat. Add Onions and garlic, cook until fragrant. Add turkey, and cook until no longer pink. Add the remaining ingredients (except green onions and cheese), cover for a few minutes to let the vegetables soften a little.
Once heated through, and carrots slightly softened, scoop evenly into peppers. Add green onions and cheese, and place in oven. Cook for 20 minutes, or until the peppers are hot and started to soften.
Place on plate and enjoy!
