Sausage & Shrimp Stir Fry with mashed sweet potatoes

This recipe is one of my favourites. It’s super filling, and has all sorts of good stuff in it. Originally I think the inspiration for the meal came from an actual recipe. However, I’ve made it so many times now, and in a bunch of different ways, that it has now adapted into something else.

This last time is probably my favourite way, because everything was done on the BBQ (except for the mashed sweet potatoes – those I still did on the stove). The great thing about that? I didn’t really need any extra flavouring. Most of the time when I make them on the stove, I add some extra sauces – some sweet chili sauce, or some bbq sauce. This one just had Salt and Pepper and let the bbq flavor and flavour of the ingredients do the speaking!

Makes about 4 -5 servings

Ingredients

2 Large Yams or Sweet Potatoes

2-3 Zuchinis, chopped into cubes

1/2 yellow onion, roughly chopped

2 Bell Peppers, chopped into midsize chunks

1 clove of garlic, chopped

3-4 links of Chicken Sausage (I’m also in love with the Jamie Oliver Sausages that they have at Safeway, they aren’t chicken, but they have only real ingredients and no added sugar)

1 Bag of uncooked Frozen shrimp – deveined, shells and tails removed, thawed.

Salt and Pepper

Chili Flakes (if desired for a little extra spice)

Directions:

(Stove Top option)

Chop Sweet Potatoes (or Yams) into large sections, boil in a salted pot of water until soft. Mash with a little butter (or other fat of your choice), and milk to soften it up, add chili flakes if you want some heat.

While the water is boiling for the potatoes, chop all of the vegetables and set aside.

Slice the sausage into pieces cross-wise so that you have little pucks of sausage.

Cook the sausage over medium heat in a frying pan. When just cooked, remove from heat, and place on a plate. Drain any excess fat. Return pan to heat, and add shrimp. Just as they start to turn pink throughout, add the vegetables and return the sausage to the pan. Season with salt and pepper. I have also added Sweet Chili sauce at this point, or a little bbq sauce.

Serve on top of mashed sweet potatoes.

(BBQ Option – you will need a bbq skillet/frying pan basket for this option)

Heat the BBQ to roughly 350F

Cook Potatoes the same way, and prepare veggies in same manner.

Once the bbq is heated, place all of the vegetables in the fry basket and place on bbq. At this time also place sausage on the grill. Cook the Sausage all the way through, and periodically mixing up the vegetables. Once sausage is cooked, remove from grill, and slice. When all of the veggies are becoming softer and heated, remove them from the basket (and the grill) and place in a bowl. Cover bowl with tin foil. Season Shrimp with salt and pepper and cook over grill in basket, until cooked through. Return Sausage and veggies into the grill basket, and reheat until all mixed together.

Serve on top of mashed sweet potatoes.
