I love curry. I love the heat and the flavour behind it, however most of the recipes that I find are all about the protein and the meat, but rarely suggest veggies. Then I found this one and it was all about the veggies! However I forgot to add the sweet potato into the recipe 😔 I even had it ready to go on the counter! Oh well. Still tasted great!
The other thing that I added to this one was some Tumeric. Did you know that curcumin, the properties that makes Tumeric yellow has anti-inflammatory properties! It also happens to go super well with curry!
