One of my favourite things to eat in the summer is bright fresh foods. Watermelon salad is probably the option that fits that description the best. Honestly? What’s better than cold crispy watermelon on a hot day? Mixed with the saltiness of the Feta cheese and a punch of mint. It’s a great addition to any type of meal (or on its own, eaten straight from a bucket…)
5 cups cubed watermelon
3/4 cup Feta cheese, crumbled
2 tbsp of diced mint
salt and pepper to taste
Put everything into a bowl except salt and pepper. Combine thoroughly. Add Salt and Pepper to taste.
